The sparse soil in which these venerable bushes grow has a high mineral content, creating a complex tea. Picked in early May it is highly oxidised for a China oolong - to around 80% which accounts for the dark leaf colour. It is then aged for three years. The name Royal Red Robe refers to a sick Ming dynasty official who after drinking the tea recovered and in gratitude placed his cloak over the tea bushes.
\r
The very large, dark, open style leaves produce a rich smooth, golden amber cup with notes of peaches, apricots and hyacinth with a long mellow finish. It has a deliciously sweet aroma. Infuse one teaspoon per cup at 85 degrees C for five minutes. Increase this time for subsequent infusions (up to four). Yellow tea is known as fresh or spring tea and is a good example of the skill of Chinese tea making. This is one of only a few still made being a rare bud tea, picked before the white downiness appears. It is mild and light having a delicate bamboo-like nose. Unusually it is pan heated then gently steamed for several hours over three days, a process known as sealed yellowing or 'men huan' whilst being covered with a cloth to enable the aromas to be re-absorbed. The tea is then pan-fired. It is therefore time-consuming to pick and process in this unique way. The liquor is fresh, sweet with nutty notes. In the cup it is smooth, sweet, vegetal with banana and sweet-corn characteristics. A really beautiful, refreshing tea with a distinctively lush taste. It is one of China's most celebrated Famous (Tribute) teas. It is less oxidised than those oolongs from the north of the province. This results in a more pronounced aroma. Dark grassy green and loosely rolled it produces a toasty, sweetly fragrant, silky textured cup which goes extremely well with even strongly flavoured foods. Make with one teaspoon per cup with freshly boiled water that has come off the boil. Infuse for three minutes.
\r
This legendary tea appeared in a dream to a devout farmer instructing him to look in a cave for a treasure which he should both take good care of and share.
