An Ji Bai Cha has a strong following in China and the leaf is notably long with a distinct jade green colour. It is so named because the hew resembles the colour of white jade. The aroma is fresh and citrusy with a delicately floral aspect. In the cup it has a grassy, gently tangy character with a soft, long finish. The liquor is clear, pale green. Use one heaped teaspoon of this very bulky tea per cup with freshly drawn and boiled water that has cooled to around 80 degrees C. Infuse for two minutes. The leaf may be infused up to four times. It has a highly acclaimed, well rounded cup, grassy character slightly milder than Sencha and it also has less caffeine. In the cup it appears a more amber shade of green than sencha. Being a mild tea, Bancha is often preferred as an accompaniment to food and its softer character is an 'easier' style to drink. Gyokuro Saemidori Organic uses the Saeimdori cultivar and is certified organic. It is processed with a light roasting which emphasises the richness of this Gyokuro. It has a mild, smooth, sweet grassy, lingering yet clean and refreshing taste. If you are a lover of senchas you will adore this tea! Infuse with freshly drawn and boiled (ideally soft, even bottled) water that has cooled to around 80C for two minutes.
\r
The region also has a clear view of mount Fuji and is located to the south west of Tokyo. Shizuoka is considered the home of sencha teas. This sencha Gyokuro is grown in the shade for twenty-one days as soon as the leaves start to bud in the spring. This is the first picking of the season. The effect is to boost chlorophyll production in the leaf which gives it its deep green colour. It also reduced photosynthesis so reducing tannins, enhancing the vegetal character and increasing sweetness the of the tea, giving it a much sought-after savoury 'umami' character. The leaves are stripped of veins and stalks before drying. The resultant Tencha leaf is then powdered in stone mills to form Matcha. As drinking Matcha involves drinking the whole leaf (as it is a powdered tea), rather than being just an infusion, the caffeine content is high (126 mg per 100 ml. after 30 seconds infusion). This increases chlorophyll levels to produce a sweet, mild tea. The leaves are then stripped of veins and stalks before drying. The resultant Tencha leaf is then powdered in stone mills to form Matcha which is traditionally used for the Japanese tea ceremony. As drinking Matcha involves drinking the whole leaf (as it is a powdered tea), rather than being just an infusion, the caffeine content is high (126 mg per 100 ml. after 30 seconds infusion). This Matcha is from the Kyoto region of Japan. It is extremely healthy, being very high in antioxidants. The cup is sweet, mild and smooth. Use one teaspoon Matcha to 30ml hot water at around 75C. Whisk back and forth from the base to the top of the cup, ideally using a bamboo whisk. A latte can be made with hot milk. Supplied in sealed 30 gram tins. Since independence in 1961 the fortunes of smallholder farmers suffered but privatisation and research into the best tea clonals plus soil and water conservation has led to a resurgence of quality production. This orthodox tea is a prime example. It is produced to the east of the Usambara Mountains in the high plateau of the Masai Steppe to the north of Mount Kilimanjaro at an altitude of about 3000 feet. The area is one of great bio-diversity, surrounded by the rain-forest of the Amani Nature Reserve. This Tanzania Green Tea is smooth and richly vegetal. Most appealing. The leaf is dark and wiry.
