An Ji Bai Cha has a strong following in China and the leaf is notably long with a distinct jade green colour. It is so named because the hew resembles the colour of white jade. The aroma is fresh and citrusy with a delicately floral aspect. In the cup it has a grassy, gently tangy character with a soft, long finish. The liquor is clear, pale green. Use one heaped teaspoon of this very bulky tea per cup with freshly drawn and boiled water that has cooled to around 80 degrees C. Infuse for two minutes. The leaf may be infused up to four times. The large, quintessentially, jade green leaves have a distinct, grassy, rose-like aroma. Being pan-fired the leaves are flat. The liquor of Dragon Well organic is bright, clear yellow-green. On the palate this is a fresh, smooth, medium-bodied tea with chestnut notes. Use one teaspoon per cup and infuse initially for three minutes with freshly boiled water that has cooled to 80 C. A beautiful tea, justly famous.
\r
Sourcing our tea
\r
This tea has been chosen for its distinctive, balanced flavour, aroma and appearance. It has a long, dark green leaf which is steamed and pressed flat. In the cup it produces a strikingly gorgeous, emerald green infusion which is fresh and bright on the palate with a lovely smooth vegetal character. Its aroma is one of fresh spring greens. This organic 'precious eyebrow' tea has a slightly curved leaf which gives it its name. The shape of the grey-green leaf is achieved by being rolled by hand at the right temperature for the right length of time. Yellow-green in the cup, Chun Mee organic is a popular, aromatic green tea that you cannot fail to love. Easy-drinking and refreshing, it is light, smooth and flavoursome, not sweet but distinctly floral. Use one teaspoon per cup with freshly drawn and boiled water that has cooled to around 80 C. and infuse for three minutes.
\r
Japanese Sencha Uchiyama. This superior emerald green steamed tea is from the Uchiyama region of Japan and is an early spring picking. It produces a sparkling golden infusion with a smooth, appetising grassiness and a flowery aroma. Infuse for two minutes with water that has come well off the boil to around 80 degrees C. Can be infused several times. Sencha was developed in Japan by intellectuals keen to create a simpler method of drinking and appreciating tea compared with the rigidity of the Tea Ceremony where powdered tea was used. It follows the approach taken by the Chinese with their Yixing teapots, using instead an equally simple porcelain teapot with projecting handle. The tea was then drunk from a straight-sided chawan teacup.
\r
Darjeeling Organic Green Risheehat. This steamed tea produces a sparkling golden infusion with a smooth, appetising grassiness and a flowery aroma. It can be infused several times.
\r
Sencha was developed in Japan by intellectuals keen to create a simpler method of drinking and appreciating tea compared with the rigidity of the Tea Ceremony where powdered tea was used. It follows the approach taken by the Chinese with their Yixing teapots, using instead an equally simple porcelain teapot with projecting handle. It is ideal for tea production having high altitudes up to 8,000 feet and being warm and humid with high rainfall. Daytime heat is often softened by mists and at night the hills bring frosts, stressing the leaf to bring out the natural flavour. This Rwanda organic tea is from the Rukeri garden located on highly fertile, well-drained marshland to the north of the capital Kigali. The garden is fifty years old but is relatively new to orthodox tea production so successfully utilises the skills of an experienced Sri Lankan manager to produce a well-made leaf of a quality comparable to Ceylons. The bushes are largely of more elegant China stock rather than Assam. This organic OP grade Rwanda orthodox tea has an attractive, tippy, wiry leaf. In the cup it appears golden, coppery-red with a deeply aromatic aroma. On the palate it is medium strength with good body and a certain citrus spiciness yet without excessive tannins. It provides welcoming relief to the end of a working day! Use one teaspoon per cup and one for the pot with freshly boiling water and infuse for four minutes. The high altitude of 5,000-8,000 feet makes the tea gardens here amongst the highest in the world and this gives a climate that is cooler and damper than would otherwise be expected at this equatorial latitude. The night-time cold at these elevations causes stress to the tea bushes, encouraging their flowering and resultant flowery flavour.
