This increases chlorophyll levels to produce a sweet, mild tea. The leaves are then stripped of veins and stalks before drying. The resultant Tencha leaf is then powdered in stone mills to form Matcha which is traditionally used for the Japanese tea ceremony. As drinking Matcha involves drinking the whole leaf (as it is a powdered tea), rather than being just an infusion, the caffeine content is high (126 mg per 100 ml. after 30 seconds infusion). This Matcha is from the Kyoto region of Japan. It is extremely healthy, being very high in antioxidants. The cup is sweet, mild and smooth. Use one teaspoon Matcha to 30ml hot water at around 75C. Whisk back and forth from the base to the top of the cup, ideally using a bamboo whisk. A latte can be made with hot milk. Supplied in sealed 30 gram tins. Alternatively, you can select a tin caddy for your tea. These square, silver coloured caddies have hinged lids. Again, 60 gram, 125 gram and 250 gram options are generally available as options which can be selected from the drop-down list.
