This organic OP grade tea it has an attractive, tippy, wiry leaf. In the cup it appears golden, coppery-red with a deeply aromatic aroma. On the palate it is medium strength with good body and a certain citrus spiciness yet without excessive tannins. It provides welcoming relief to the end of a working day! Use one teaspoon per cup and one for the pot with freshly boiling water and infuse for four minutes. In fact Thiashola is the oldest of Nilgiri's tea gardens having been established in 1859. It was certified organic in 2003. The leaf has a reddy hue. The liquor is classically light, with a fragrant and brisk, refreshing character that explains why those in the know are so devoted to this excellent tea. All the other natural compounds present also remain in this extremely healthy tea which is grown in the shade prior to picking. This makes the tea low in tannin and therefore very smooth. In Japan the tea buds begin growing in April and this tea is picked early, whilst other teas are picked nearer maturity in July. Immediately after they are plucked they are steamed, rolled and then fired until they resemble green needles. They make a splendid tea with a mixture of subtle sweetness with a fresh grassy aroma. This organic 'precious eyebrow' tea has a slightly curved leaf which gives it its name. The shape of the grey-green leaf is achieved by being rolled by hand at the right temperature for the right length of time. Yellow-green in the cup, Chun Mee organic is a popular, aromatic green tea that you cannot fail to love. Easy-drinking and refreshing, it is light, smooth and flavoursome, not sweet but distinctly floral. Use one teaspoon per cup with freshly drawn and boiled water that has cooled to around 80 C. and infuse for three minutes.\u003c\/p\u003e\r\u003cp\u003e\u003cstrong\u003eJapanese Sencha Uchiyama.\u003c\/strong\u003e This superior emerald green steamed tea is from the Uchiyama region of Japan and is an early spring picking. It produces a sparkling golden infusion with a smooth, appetising grassiness and a flowery aroma. Infuse for two minutes with water that has come well off the boil to around 80 degrees C. Can be infused several times. Sencha was developed in Japan by intellectuals keen to create a simpler method of drinking and appreciating tea compared with the rigidity of the Tea Ceremony where powdered tea was used. It follows the approach taken by the Chinese with their Yixing teapots, using instead an equally simple porcelain teapot with projecting handle.
