This Vietnam oolong Imperial is deep green and umber in colour. It is fairly tightly rolled and has a lightly oxidised style. The aroma is creamy and fragrant which in the cup is pale yellowy green. On the palate Vietnam Imperial Oolong is a beautifully sweet floral tea with citrus notes. A rewarding experience! Produced at Tam Duong, at an average altitude of 3500 feet, in the shade of mount Fansipan, only the bud and first leaf is picked, unlike most oolongs which use more mature leaves. Picking is twice each year in early summer and mid autumn. Using the Jin Xuan cultivar and grown in the absence of pesticides. In attempting to defend itself against a predatory insect, the leafhopper, the leaf develops enzymes which give the tea a subtle, complex character. Beautifully open style leaves in attractive oranges and ochres have a light fruity applely and plum aroma. On the palate it is unmistakeably floral, honeyish and almost rose-like yet it is clean tasting and refreshing. Use one heaped teaspoon per cup with freshly boiled water that has come off the boil.
