Evening Tea Collection: Low caffeine teas to be enjoyed in the evening, with or without food.

Our evening tea collection comprises the following four teas:

Japanese Genmaicha: green tea & toasted rice. Genmaicha is Japanese green tea uniquely combined with toasted brown rice. Some of this rice pops during toasting giving it its alternative name ‘popcorn tea’. This fresh tasting, nutty tea is popular throughout Japan. You are sure to enjoy it too. It should be brewed for between three and five minutes with fresh water that has come off the boil for a minute or so.

China Oolong S E Chung: Grown in the Wuyi mountains of Fujian Province China Oolong S E Chung has a shorter fermentation time than other oolongs this province, making it a greener, woodier, more herbacious style tea with a superb, delicate flavour. Use one teaspoon per cup and one for the pot with freshly boiled water that has come off the boil. Infuse for four minutes.

Green Darjeeling Risheehat organic. An organic, fresh green looking tea with an equally fresh aroma with noticeable tip. In the cup Risheehat Green is aromatic, complexly foresty with Darjeeling muscatel character. It has well balanced astringency. Brew for three minutes.

China Tie Guan Yin, Iron Goddess of Mercy Oolong. This legendary tea appeared in a dream to a devout farmer instructing him to look in a cave for a treasure which he should both take good care of and share. On finding a tiny tea sprout, he planted it and in due course produced an unusually fragrant and flavourful tea. This famous, top China oolong from Anxi in southern Fujian province is less oxidised than those oolongs from the north of the province resulting in a more pronounced aroma. Dark grassy green and loosely rolled, Tie Guan Yin produces a toasty, sweetly fragrant, silky textured cup which goes extremely well with even strongly flavoured foods. Make with one teaspoon per cup with freshly boiled water that has come off the boil. Infuse for three minutes.
